Cashew Pimento Sauce

I first had this sauce over a baked potato in Southern Indiana at Timber Ridge Camp, a place where I recently spoke on prayer. The sauce was DELICIOUS!!!! The chef gave me the directions.


1 C Boiling Water

1.5 C Cashews

1 TBS Onion Powder

1 TBS Garlic Powder

1tsp Salt

From one half to 1 Red Pepper (Pimento can be substituted)

1 TBS Lemon Juice


1. Put the boiling water in a blender

2. Add Onion, Garlic and Salt and Lemon Juice.

3. Add the Cashews and continue blending until perfect smooth.

4. Add the Pepper and blend to desired consistency.


To make Total Vegetarian Sour Cream, don’t use any pepper and add more lemon juice.
