Jamoca Almond Fudge Ice Cream

1. Mix together

3 cup soy milk
2 cup cashews
1/4 cup maple syrup
1/8 tsp salt
1 Tbs vanilla
5 Tbs Roma Coffee (sometimes I use a little less)
1 1/2 cup carob chips (malt sweeted is what I use)

2. Blend and freeze

For freezing I put mine in the ice cream maker and then freeze, since it seems to improve the consistency)

This will make approx. 2 quarts so most of the time I cut the recipe in half.
