These vegetables should be cooked in their own juices, not water!
1 l of oil (1/2 will also work).
3 kg red peppers
2 kg onion
2 kg tomatoes
1 l of tomato juice.
To this add one of the three alternatives:
2 kg mushrooms
2 kg of white beans
2 kg of egg plant (baked at high heat in a baking dish in a tiny bit of oil)
Boil for 40 minutes.
Put in jars and boil in canner for 5 minutes.
