Tocana de Legume
Mix of Vegetables
These vegetables should be cooked in their own juices, not water!
1 l (liter) of oil (can be made with ½ l)
3 kg of red peppers (minced in food processor)
2 kg onions
2 kg carrots (grated)
2 kg tomatoes
1 l tomato juice
Boil all of this together for 45 minutes. Then add 250 g of uncooked rice and boil for another 30 minutes.
I first ate this in Parscov, Romania. Fortunately there was a recipe, which I obtained. It was so good I even brought home a canning jar full back. Luckily, customs allowed me to bring it through. I eat this as a spread on toast. This is delicious beyond belief.
