1. Crystal's Lentil Soup Recipe (This is my favorite!)

Cook together:

    1 Cup dry lentils
    1 Tablespoon salt
    1 Onion diced
    Dash Garlic powder
    3 Cups water
    1 grated carrot
    1/8 teaspoon Thyme
    2 stalks celery chopped

When above is cooked, add Cream Base:
    4 Cups Regular soy milk
    3 Tablespoons flour
    3 Tablespoons non-dairy butter

To make this soup even more special, substitute 1 Cup of Coconut Milk for one of the Cups of Soy Milk. This is easily the BEST lentil soup I've ever eaten, and most people rave over it!!!

Simmer until flour has thickened and soup is piping hot.

Jay's Lentil Soup

3/4 c     chopped onion
3/4 c     chopped celery
1           clove garlic
1/4 c     margarine or olive oil
6 c        water
1-28 oz can tomatoes cut up
3/4 c     dry lentils rinsed and drained
3/4 c     pearled barley
6          vegetarian bouillon cubes (I used 4)
1/2 t     dried rosemary – crushed
1/2 t     dried oregeno – crushed
1/4 t     pepper
1 c        thinly sliced carrots

In a 4 qt. pot cook onion, celery and garlic in margarine till tender. Add water, undrained tomatoes, lentils, barley bouillon cubes, rosemary, oregano and pepper. Bring to boil reduce heat. Cover and simmer for 45 minutes. Add carrots and simmer for 15 minutes or longer – until carrots are tender. Ladle soup into bowls and top with cheese if desired.
