Cherie’s Kumara Soup
(Sweet Potato Soup)

Kumara is the Maori name for Sweet Potato in New Zealand. I believe their Kumara is a slightly different than our sweet potato, but you should be able to make the soup just the same.

Note the cream comes coconut cream, which in the minds of some people--I found this to be true especially in NZ--is good for you regardless of negative press against the fat content of coconut, some suggesting it is needed and extremely beneficial. I can say the taste is wonderful.

Cherie's Recipe

2 lbs Kumara (NZ Sweet Potato)
Small Can: coconut Cream
1 Onion (diced)
2 Garlic Cloves
Vegetable Stock
Curry Paste (1 sachet)

Cover all ingredients with water and boil until the vegetables are cooked. Glend until smooth.

Season with salt to taste.

Stir in the Coconut Cream


My soups are always one offs, but the basic ingredients for that recipe were about 1 kg kumara (sweet potato), small can coconut cream, 1 onion (diced), 2 cloves garlic, vegetable stock (Massel brand is the best, but probably unavailable in the states), and I think I may have added a sachet of curry paste too. Cover all of the ingredients (excluding the coconut cream) with water and boil until the vegetables are cooked. Blend until smooth, season with salt, stir in the cream and you have a winner! I hope you will be able to replicate it. Of course, your sweet potatoes will probably taste a little different but I’m sure it will still taste nice.
