Split Pea Soup

4 c.    Split peas

6 c.    Water
2 t.    Salt - add more at end if needed
4    Bay leaves
8    Carrots peeled and chopped - about 3.5 c.
2    Onions chopped - about 2.5 c.

Bring to a boil and then simmer for about 2 hours - until the split
peas are soft and mushy. If it gets to thick just add a little water. I
also don't worry about exact amounts and usually salt to taste at the
end. If your split peas are old they will take longer to cook and may
not cook until soft at all.
