Jamocha Almond Fudge
(Total Vegetarian)

Ingredients
1.5 C Vanilla Soy Milk
1 C Cashews
1/8 C Maple Syrup
1/4 tsp Salt
1.5 tsp Vanilla
2 TBS Roma Coffee (cereal coffee)
3/4 C Carob Chips
Almond (pieces) as desired

Directions
Blend the Soy Milk and Cashews together.
Add and blend the rest of the ingredients
Stir in Almonds as desired.

I put the mix in a shallow container in the freezer and let it freeze over night. Take it out 30 minutes prior to eating to let it soften.

Notes
It is important to NOT USE any "light" ingredients since these are often diluted with water and will introduce water crystals to the mix. This is true for the soy milk and for the syrup.
